Every recipe in our kitchen traces back to a real place: the fish markets of Miraflores, the night stalls of Arequipa, the family tables of Cusco. We import our achiote, our ají panca, our Quebranta pisco — because shortcuts would betray the story we're trying to tell.

The name Wanka11 comes from the wanka people of the Andes and the 11th borough that became our home. Two worlds. One kitchen.
